My latest breakfast obsession are potato hash mixes. Before I started my low FODMAP lifestyle change, we would eat lots of gluten with breakfast (burritos, pancakes, bagels, etc.) and afterward I would always feel like absolute garbage.
Since I’m no longer eating gluten or dairy, I’m forced to think outside the box for breakfast – especially on days where Randy is home.
Introducing: breakfast burrito hash? Burritoless breakfast burritos? Ashley’s potato hash? Whatever it’s called, it’s delicious. 😂
Here’s what’s in it:
Burritoless Breakfast Burritos
- 2 small diced potatoes (leave the skin on for fiber!)
- 2 oz ground pork (or bacon, just watch out for added spices, nitrates, etc.)
- 2 cups fresh spinach
- handful of diced green onions
- 2 eggs
First, I sauté the potatoes in garlic infused olive oil (since no more garlic or regular onions for me).
Meanwhile, I cook the sausage in another pan.
Then, I mix the two together and toss in green onions and spinach. Salt and pepper to preference.
Top with two eggs over medium.
Makes enough for two people, and keeps me full all morning. 🥰
